Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup packed light brown sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed ripe bananas (about 3-4 medium bananas)
  • 1/2 cup buttermilk (or milk mixed with 1/2 teaspoon lemon juice, let sit 5 minutes)
  • 3/4 cup chopped walnuts, plus 2 tablespoons for topping

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set this dry mix aside.
  3. In a large bowl, whisk the brown sugar and melted butter until combined.
  4. Beat in the eggs one at a time. Stir in the vanilla extract.
  5. Add the mashed bananas and buttermilk to the wet ingredients. Mix until just combined. Do not overmix.
  6. Gently fold the dry ingredients into the wet mixture until just a few streaks of flour remain.
  7. Fold in the 3/4 cup of chopped walnuts. Stop mixing as soon as they are incorporated.
  8. Divide the batter evenly among the 12 muffin cups. Sprinkle the remaining 2 tablespoons of walnuts on top of each.
  9. Bake for 5 minutes at 400 degrees F. Then, reduce the oven temperature to 375 degrees F (190 degrees C) and continue baking for 15 to 18 minutes more, or until a toothpick inserted into the center comes out clean.
  10. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Use very ripe, spotty bananas for the best flavor and moisture.
  • For a richer flavor, you can substitute melted coconut oil for the butter.
  • To prevent a sunken center, remember to reduce the oven temperature after the initial 5 minutes of baking.
