A vibrant and crunchy slaw featuring shredded Brussels sprouts and crisp apple, tossed in a zesty vinaigrette. It’s a refreshing side dish that adds a perfect touch of tang and texture to any meal.

  • 1 pound Brussels sprouts, trimmed and thinly sliced
  • 1 large apple, cored and thinly sliced
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large bowl, combine the sliced Brussels sprouts, apple, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, and honey.
  3. Pour the vinaigrette over the Brussels sprout mixture.
  4. Toss gently to coat all the ingredients evenly.
  5. Season with salt and pepper to your liking.
  6. Serve immediately or let it chill for 15-30 minutes to allow the flavors to meld.

Notes

  • For a finer shred, use a food processor with a slicing disc.
  • Granny Smith apples work well for their tartness, but Honeycrisp or Fuji apples are also delicious.
  • Add toasted nuts like walnuts or pecans for extra crunch.
