These Buffalo Blue Cheese Meatballs are a bold and flavorful party appetizer. They combine spicy buffalo sauce with tangy blue cheese in perfectly seasoned chicken meatballs, making them an ideal treat for game days or any gathering where you want to impress.

  • 1 pound ground chicken
  • 1/2 cup panko breadcrumbs
  • 1/4 cup finely chopped yellow onion
  • 1/4 cup crumbled blue cheese
  • 1/4 cup Frank’s RedHot sauce
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Sauce:
  • 1/2 cup Frank’s RedHot sauce
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons blue cheese dressing
  • 1 tablespoon white vinegar

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, panko breadcrumbs, chopped onion, 1/4 cup crumbled blue cheese, 1/4 cup Frank’s RedHot sauce, egg, garlic powder, salt, and pepper. Mix gently until just combined. Do not overmix.
  3. Roll the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  4. Bake for 18-20 minutes, or until the meatballs are cooked through and no longer pink in the center.
  5. While the meatballs are baking, prepare the sauce. In a medium bowl, whisk together the 1/2 cup Frank’s RedHot sauce, melted butter, blue cheese dressing, and white vinegar until well combined.
  6. Once the meatballs are done baking, transfer them to a serving bowl. Pour the buffalo blue cheese sauce over the meatballs and toss gently to coat.
  7. Serve hot with extra blue cheese crumbles and celery sticks, if desired.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the meatball mixture.
  • If you don’t have Frank’s RedHot sauce, any cayenne pepper-based hot sauce will work.
  • Blue cheese dressing can be substituted with ranch dressing for a milder flavor.
