1 large head cauliflower, cut into bite-sized florets
1 cup all-purpose flour
1 cup panko breadcrumbs
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup unsweetened almond milk
1/2 cup Frank’s RedHot Original Cayenne Pepper Sauce
1/4 cup unsalted butter, melted
2 tablespoons apple cider vinegar
1 tablespoon honey or maple syrup (optional, for a touch of sweetness)
Ranch or blue cheese dressing, for serving
Celery sticks, for serving
Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, toss the cauliflower florets with 1 tablespoon of olive oil, garlic powder, onion powder, salt, and pepper.
In a separate shallow dish, whisk together the flour and panko breadcrumbs.
In another bowl, whisk together the almond milk.
Dip each cauliflower floret first into the almond milk, letting excess drip off, then dredge it in the flour and panko mixture, ensuring it’s fully coated.
Place the coated cauliflower florets on the prepared baking sheet in a single layer.
Bake for 20-25 minutes, flipping halfway through, until golden brown and tender-crisp.
While the cauliflower is baking, prepare the buffalo sauce. In a medium saucepan, combine the Frank’s RedHot sauce, melted butter, apple cider vinegar, and honey (if using). Heat over medium heat, stirring, until well combined and warm. Do not boil.
Once the cauliflower is baked, carefully add the hot cauliflower to the saucepan with the buffalo sauce. Gently toss to coat all the florets evenly.
Return the sauced cauliflower to the baking sheet and bake for another 5-7 minutes, or until the sauce is slightly thickened and clings to the cauliflower.
Serve immediately with ranch or blue cheese dressing and celery sticks.
Notes
For extra crispy bites, you can double-coat the cauliflower. Dip in almond milk, then breadcrumbs, then almond milk again, and finally breadcrumbs.
Adjust the amount of hot sauce to your spice preference.
If you don’t have almond milk, you can use regular milk or buttermilk.
Ensure the cauliflower is dry before coating for better adhesion of the breadcrumbs.
