  • 1 head cauliflower, cut into florets
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup water
  • 1/2 cup buffalo sauce
  • 2 tablespoons butter, melted
  • 1/4 cup ranch dressing
  • 12 small corn tortillas
  • Shredded lettuce
  • Diced tomatoes
  • Crumbled cotija cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, garlic powder, onion powder, salt, and pepper.
  3. Gradually whisk in the water until a smooth batter forms.
  4. Add the cauliflower florets to the batter and toss to coat evenly.
  5. Spread the coated cauliflower in a single layer on the prepared baking sheet.
  6. Bake for 20-25 minutes, or until the cauliflower is tender and lightly golden.
  7. While the cauliflower bakes, whisk together the buffalo sauce and melted butter in a medium bowl.
  8. In a small bowl, combine the ranch dressing, shredded lettuce, diced tomatoes, and cotija cheese for the toppings.
  9. Once the cauliflower is baked, add it to the bowl with the buffalo sauce mixture and toss to coat.
  10. Warm the tortillas according to package directions.
  11. Fill each tortilla with the buffalo cauliflower, and top with the prepared toppings.
