1 (8 ounce) package cream cheese, softened
1/2 cup ranch dressing
1/2 cup blue cheese dressing
1/2 cup Frank’s RedHot sauce (or similar cayenne pepper sauce)
2 cups cooked, shredded chicken
1 cup shredded cheddar cheese, divided
1/4 cup blue cheese crumbles (optional, for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
In a medium bowl, combine the softened cream cheese, ranch dressing, blue cheese dressing, and Frank’s RedHot sauce. Mix until smooth.
Stir in the shredded chicken and 3/4 cup of the shredded cheddar cheese until everything is well combined.
Spread the mixture evenly into the prepared baking dish.
Top the dip with the remaining 1/4 cup of shredded cheddar cheese and the optional blue cheese crumbles.
Bake for 20 to 25 minutes, or until the dip is hot throughout and the cheese on top is melted and bubbly.
Let the dip cool for 5 minutes before serving warm with tortilla chips, celery sticks, or crackers.
Notes
You can make this dip ahead of time. Assemble the dip in the baking dish, cover it, and refrigerate for up to 24 hours. Add 5 to 10 minutes to the baking time if baking straight from the refrigerator.
For a slow cooker version, combine all ingredients (except the topping cheese) in a small slow cooker. Cook on low for 2 hours or high for 1 hour. Top with cheese and cook until melted.
Use your favorite shredded chicken: rotisserie chicken works great for quick preparation.
