  • 4 large bell peppers, any color
  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup buffalo sauce
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 2 tablespoons ranch dressing (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the bell peppers in half lengthwise and remove the seeds and membranes.
  3. Place the pepper halves cut-side up in a baking dish.
  4. Cook the chicken breasts until thoroughly cooked. You can boil, bake, or use a slow cooker. Shred the chicken.
  5. In a bowl, mix the shredded chicken with buffalo sauce, cream cheese, cheddar cheese, blue cheese (if using), and ranch dressing (if using). Season with salt and pepper.
  6. Spoon the chicken mixture evenly into the prepared bell pepper halves.
  7. Pour about 1/4 inch of water into the bottom of the baking dish.
  8. Cover the baking dish with foil.
  9. Bake for 30 minutes.
  10. Remove the foil and bake for another 10-15 minutes, or until the peppers are tender and the filling is bubbly and lightly browned.

Notes

  • For a milder flavor, use less buffalo sauce or a milder variety.
  • You can substitute other cheeses like Monterey Jack or mozzarella.
  • Serve with extra ranch or blue cheese dressing for dipping.
