A fun and creative weeknight meal that combines your favorite cheeseburger flavors with the ease of a quesadilla. Perfect for a quick and satisfying dinner.

  • 1 lb ground beef
  • 1/2 cup finely chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/4 cup ketchup
  • 2 tablespoons yellow mustard
  • 1 tablespoon pickle relish
  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup thinly sliced dill pickles
  • Butter or cooking spray for cooking

Instructions

  1. In a large skillet, cook the ground beef and chopped onion over medium-high heat until the beef is browned and the onion is softened. Drain off any excess grease.
  2. Stir in the salt, black pepper, garlic powder, onion powder, paprika, and chili powder. Cook for 1 minute more, stirring constantly.
  3. Add the ketchup, yellow mustard, and pickle relish to the skillet. Stir to combine and cook for another 2 minutes until heated through.
  4. Wipe out the skillet if needed, or use a separate griddle or large non-stick skillet. Lightly butter or spray with cooking spray.
  5. Place one tortilla in the skillet. Sprinkle half of the tortilla with 1/4 cup cheddar cheese and 1/4 cup Monterey Jack cheese.
  6. Spoon about 1/4 of the burger mixture over the cheese. Top with a few pickle slices.
  7. Fold the other half of the tortilla over the filling.
  8. Cook for 2-3 minutes per side, or until golden brown and the cheese is melted and gooey.
  9. Repeat with the remaining tortillas and burger mixture.
  10. Cut each quesadilla into wedges and serve immediately.

Notes

  • For an extra cheesy quesadilla, add more cheese!
  • You can customize your quesadilla with your favorite burger toppings like lettuce, tomato, or special sauce.
  • Serve with your favorite dipping sauces like sour cream, salsa, or extra ketchup.
