  • 1 cup warm milk (about 110°F)
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar, plus 1 teaspoon
  • 2 large eggs, room temperature
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 3 3/4 cups all-purpose flour, plus more for dusting
  • 1 1/2 teaspoons salt
  • 1/2 cup (1 stick) unsalted butter, softened, for brushing

Instructions

  1. In a large bowl, dissolve 1 teaspoon of sugar in 1/4 cup of the warm milk. Sprinkle the yeast over the top. Let it sit for 5 to 10 minutes until foamy.
  2. Add the remaining warm milk, the rest of the sugar, eggs, and melted butter to the yeast mixture. Whisk to combine.
  3. In a separate bowl, whisk together the flour and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a shaggy dough forms.
  5. Turn the dough out onto a lightly floured surface. Knead for 8 to 10 minutes until the dough is smooth and elastic.
  6. Place the dough in a lightly greased bowl, turning to coat. Cover the bowl with plastic wrap or a clean kitchen towel. Let it rise in a warm spot for 1 to 1.5 hours, or until doubled in size.
  7. Gently punch down the dough. Divide it into 12 equal pieces.
  8. Roll each piece into a smooth ball. Arrange the balls in a greased 9×13 inch baking pan, leaving a little space between them.
  9. Cover the pan loosely and let the rolls rise again in a warm place for 30 to 45 minutes, or until puffy.
  10. Preheat your oven to 375°F (190°C).
  11. Bake for 15 to 18 minutes, or until the tops are golden brown.
  12. Immediately after removing the rolls from the oven, brush the tops generously with the softened butter.
  13. Serve warm for the best buttery flavor.
