A quick and simple recipe for stir-fried cabbage featuring a bright, fresh sauce made from garlic and ginger. This dish is suitable for a fast weeknight meal.

  • 1 medium head green cabbage, thinly sliced
  • 1 tablespoon neutral cooking oil (like canola or vegetable)
  • 1 teaspoon sesame oil
  • 1/2 cup vegetable broth or water
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon cornstarch (optional, for thickening)
  • 2 tablespoons fresh ginger, minced
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar or maple syrup
  • Optional additions: 1 cup sliced mushrooms, 1/2 cup sliced carrots, 1/2 cup cooked tofu or chicken

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the minced ginger, minced garlic, soy sauce, rice vinegar, and brown sugar. Set aside.
  2. Heat the cooking oil in a large skillet or wok over medium-high heat.
  3. Add the sliced cabbage (and any hard vegetables like carrots, if using). Stir fry for 3 to 4 minutes until the cabbage starts to wilt slightly. You want it tender-crisp.
  4. If using, add softer additions like mushrooms or pre-cooked protein now. Stir for 1 minute.
  5. Pour the prepared garlic ginger sauce over the cabbage mixture. Stir quickly to coat everything.
  6. If you desire a thicker sauce, mix the cornstarch with 1 tablespoon of cold water in a separate small cup to create a slurry. Pour the slurry into the wok while stirring constantly.
  7. Cook for 1 minute more until the sauce thickens slightly.
  8. Remove from heat. Drizzle with sesame oil and toss one final time.
  9. Serve immediately over steamed rice or noodles.

Notes

  • For tender-crisp cabbage, cook it quickly over high heat. Do not overcook, or it will become soft and watery.
  • To make this a noodle stir fry, cook 6 ounces of noodles separately, drain them, and toss them into the wok with the sauce in step 5.
  • For extra flavor, add 1/2 teaspoon of red pepper flakes to the sauce mixture.
