A creamy and comforting fettuccine Alfredo with a spicy Cajun kick. This recipe is perfect for a flavorful weeknight dinner.

Ingredients

Scale
  • 1 pound fettuccine pasta
  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup unsalted butter
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Cook fettuccine according to package directions. Drain, reserving about 1 cup of pasta water.
  2. While pasta is cooking, toss chicken pieces with Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add butter to the same skillet and melt over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  5. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce is smooth.
  6. Add cooked chicken back to the skillet. Toss to coat.
  7. Add the drained fettuccine to the skillet with the sauce and chicken. Toss to combine. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • Adjust the amount of Cajun seasoning to your spice preference.
  • For extra flavor, you can add a pinch of cayenne pepper to the sauce.
  • Feel free to add sautéed bell peppers or onions to the dish.
