  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (adjust to your spice preference)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1/2 cup frozen corn
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces with Cajun seasoning, smoked paprika, garlic powder, and cayenne pepper. Toss to coat evenly.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the chopped onion and bell pepper to the same skillet. Cook until softened, about 5 minutes.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Add the diced tomatoes (with juice), uncooked rice, and chicken broth to the skillet. Stir well to combine.
  6. Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and simmer for 15 minutes without lifting the lid.
  7. Remove the lid. Stir in the cooked chicken and frozen corn. Cover again and cook on low for another 5 to 10 minutes, or until the rice is tender and the liquid is absorbed.
  8. Fluff the rice with a fork. Taste and add salt and pepper if needed. Serve immediately.

Notes

  • For an extra layer of flavor, use homemade chicken broth.
  • If you prefer leaner meat, you can substitute chicken breasts, but watch the cooking time closely to prevent drying.
  • This dish reheats well for lunch the next day.
