1 pound large shrimp, peeled and deveined
1 tablespoon Cajun seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1/2 cup chopped yellow onion
1/4 cup chopped green bell pepper
2 cloves garlic, minced
1/2 cup chicken broth
1/4 cup heavy cream
1/4 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley
1 cup stone-ground grits
4 cups water
1 teaspoon salt
Instructions
For the grits: Bring 4 cups of water and 1 teaspoon of salt to a boil in a saucepan. Gradually whisk in the grits. Reduce heat to low, cover, and cook for 20-25 minutes, stirring occasionally, until tender and creamy. Stir in the cheddar cheese until melted.
For the shrimp: Pat the shrimp dry with paper towels. In a bowl, toss the shrimp with Cajun seasoning, 1/2 teaspoon salt, and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
Add the minced garlic and cook for 1 minute more until fragrant.
Add the seasoned shrimp to the skillet. Cook for 2-3 minutes per side, until pink and cooked through.
Pour in the chicken broth and heavy cream. Bring to a simmer and cook for 2-3 minutes, stirring to combine the flavors.
Stir in the chopped parsley.
Serve the Cajun shrimp mixture over the creamy grits.
Notes
Adjust the amount of Cajun seasoning to your spice preference.
For extra creaminess, you can add a tablespoon of butter to the grits when you add the cheese.
