  • 1 tbsp olive oil
  • 1 lb andouille sausage, sliced
  • 1 lb large shrimp, peeled and deveined
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • Cooked rice, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add andouille sausage and cook until browned, about 5 minutes. Remove sausage from skillet and set aside, leaving drippings in the pan.
  3. Add shrimp to the skillet and cook for 1-2 minutes per side, until pink. Remove shrimp and set aside with the sausage.
  4. Add onion and bell pepper to the skillet. Cook until softened, about 5-7 minutes.
  5. Stir in minced garlic and cook for 1 minute more until fragrant.
  6. Add diced tomatoes (with juice), chicken broth, Cajun seasoning, and smoked paprika. Stir to combine.
  7. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan.
  8. Return the cooked sausage and shrimp to the skillet. Stir to coat with the sauce.
  9. Simmer for 5-7 minutes, or until the sauce has thickened slightly and the shrimp are cooked through.
  10. Season with salt and black pepper to taste.
  11. Serve hot over cooked rice.

Notes

  • For extra spice, add a pinch of cayenne pepper.
  • Feel free to add other vegetables like corn or okra.
  • Adjust Cajun seasoning to your preferred spice level.
