Ingredients

  • For the Crust: 1 1/2 cups all-purpose flour, 1/2 cup granulated sugar, 1/4 teaspoon salt, 1/2 cup (1 stick) cold unsalted butter, cubed
  • For the Cheesecake Filling: 1 (8 ounce) package cream cheese, softened, 1/2 cup granulated sugar, 1 large egg, 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Prepare the crust: In a medium bowl, whisk together the flour, sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press the crust mixture firmly and evenly into the bottom of the prepared pan. Bake the crust for 12-15 minutes, until lightly golden. Remove from the oven and set aside.
  4. Prepare the cheesecake filling: In a separate bowl, beat the softened cream cheese and sugar together until smooth. Beat in the egg and vanilla extract until just combined. Do not overmix.
  5. Pour the cheesecake filling evenly over the warm crust.
  6. Prepare the apple topping: In a small saucepan, combine the diced apples, brown sugar, flour, cinnamon, nutmeg, and water.
  7. Cook over medium heat, stirring occasionally, until the apples soften slightly and the sauce thickens, about 5-7 minutes.
