A rich and creamy cheesecake with a graham cracker crust, topped with tender, spiced apples and a decadent caramel drizzle. Perfect for autumn gatherings.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1/2 cup sour cream
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 1 apple, peeled, cored, and diced
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup caramel sauce

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar. Stir in melted butter until combined. Press mixture onto the bottom of a 9-inch springform pan.
  3. Bake for 8-10 minutes. Let cool.
  4. In a large bowl, beat cream cheese and 1 1/4 cups sugar until smooth.
  5. Beat in sour cream and vanilla extract.
  6. Add eggs one at a time, beating well after each addition.
  7. Pour half of the cheesecake mixture over the crust.
  8. In a small bowl, toss diced apple with cinnamon and nutmeg. Sprinkle half of the apples over the cheesecake mixture.
  9. Pour remaining cheesecake mixture over the apples.
  10. Sprinkle remaining apples on top.
  11. Drizzle caramel sauce over the top.
  12. Bake for 50-60 minutes, or until the center is almost set.
  13. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  14. Remove from oven and let cool completely on a wire rack.
  15. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a smoother caramel swirl, warm the caramel sauce slightly before drizzling.
  • Ensure cream cheese and sour cream are at room temperature for a lump-free batter.
  • Prevent cracking by not over-mixing the batter and cooling the cheesecake gradually.
