A rich and creamy cheesecake topped with tender, spiced apples and a luscious caramel drizzle. This dessert is a perfect fall treat.

  • 1 1/4 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 cups chopped apples (like Honeycrisp or Fuji)
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/2 cup caramel sauce

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  3. Bake the crust for 8-10 minutes. Let cool.
  4. In a large bowl, beat cream cheese and 3/4 cup granulated sugar until smooth.
  5. Add eggs one at a time, beating well after each addition.
  6. Stir in vanilla extract, 1/2 teaspoon cinnamon, and nutmeg.
  7. In a separate bowl, toss chopped apples with brown sugar, lemon juice, 1 teaspoon cinnamon, and allspice.
  8. Pour half of the cheesecake batter over the crust.
  9. Spoon the apple mixture over the batter.
  10. Pour the remaining cheesecake batter over the apples.
  11. Bake for 50-60 minutes, or until the center is almost set.
  12. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  13. Remove from oven and let cool completely on a wire rack.
  14. Chill in the refrigerator for at least 4 hours, or preferably overnight.
  15. Before serving, drizzle with caramel sauce.

Notes

  • For a smoother caramel swirl, gently swirl the caramel sauce into the unbaked cheesecake batter.
  • Ensure all dairy ingredients are at room temperature for a smooth batter.
  • Don’t overmix the batter once the eggs are added.
