This is the caramel corn recipe that disappears instantly at every gathering. We fixed the flawed versions online to bring you a foolproof, addictively sweet, and perfectly crunchy snack.

Ingredients

Scale
  • 6 cups popped popcorn
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda

Instructions

  1. Preheat your oven to 250 degrees F. Line a large baking sheet with parchment paper.
  2. In a medium saucepan, combine the sugar, corn syrup, butter, and salt.
  3. Cook over medium heat, stirring constantly until the sugar dissolves.
  4. Bring the mixture to a boil. Stop stirring and allow it to boil for exactly 5 minutes.
  5. Remove the saucepan from the heat. Stir in the vanilla extract.
  6. Quickly stir in the baking soda. The mixture will foam up rapidly.
  7. Pour the hot caramel mixture immediately over the popped popcorn in a large bowl.
  8. Use a large rubber spatula to gently fold and toss the popcorn until it is evenly coated. Work quickly.
  9. Spread the coated popcorn in a single layer onto the prepared baking sheet.
  10. Bake for 45 minutes, stirring gently every 15 minutes to prevent burning and ensure even coating.
  11. Remove from the oven and let it cool completely before breaking it apart.

Notes

  • Use freshly popped, unseasoned popcorn for the best crunch.
  • Ensure you use light corn syrup, not dark.
  • Do not overbake; the goal is crispness, not bitterness.
  • The baking soda reaction is what gives the coating its light texture.
