Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat vegetable oil in a non-stick skillet over medium heat.
  5. Pour approximately 1/4 cup of batter onto the skillet for each pancake.
  6. Cook for 2-3 minutes per side, until golden brown and cooked through. Set aside.
  7. In a separate skillet, melt 1/4 cup butter over medium heat.
