A delightful tart featuring sweet caramelized figs and creamy brie cheese on a flaky pastry crust. This recipe is perfect as an appetizer or for a special brunch.

  • 1 sheet puff pastry, thawed
  • 1 tablespoon butter
  • 8 ounces fresh figs, halved or quartered
  • 2 tablespoons brown sugar
  • 1 tablespoon balsamic vinegar
  • 4 ounces brie cheese, rind removed and sliced
  • 1 egg, beaten (for egg wash)
  • Fresh thyme leaves, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Unfold the puff pastry sheet onto the prepared baking sheet. Score a 1-inch border around the edges of the pastry with a sharp knife, being careful not to cut all the way through. Prick the center area of the pastry several times with a fork.
  3. In a skillet, melt the butter over medium heat. Add the figs and brown sugar. Cook, stirring occasionally, until the figs begin to soften and caramelize, about 5-7 minutes. Stir in the balsamic vinegar and cook for another minute until slightly thickened. Remove from heat.
  4. Arrange the sliced brie cheese evenly over the center of the puff pastry, within the scored border.
  5. Spoon the caramelized fig mixture over the brie.
  6. Brush the scored border of the puff pastry with the beaten egg wash.
  7. Bake for 15-20 minutes, or until the pastry is golden brown and puffed up, and the brie is melted and bubbly.
  8. Let the tart cool slightly before garnishing with fresh thyme leaves, if desired.
  9. Slice and serve warm.

Notes

  • Ensure your puff pastry is fully thawed but still cold for the best results.
  • If fresh figs are not available, dried figs can be rehydrated and used, though the texture will differ.
  • Adjust the amount of brown sugar based on the sweetness of your figs.
