  • 1.5 lbs salmon fillet
  • 2 tbsp olive oil
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup dried figs, stemmed and chopped
  • 2 tbsp balsamic vinegar
  • 1 tbsp brown sugar
  • 1 tsp fresh thyme leaves
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Add sliced onions and cook, stirring occasionally, until softened and lightly browned, about 10-15 minutes.
  4. Add minced garlic and cook for 1 minute more until fragrant.
  5. Stir in chopped figs, balsamic vinegar, brown sugar, and thyme. Cook for 2-3 minutes until the figs soften and the sauce thickens slightly.
  6. Season the onion and fig mixture with salt and pepper.
  7. Place the salmon fillet on top of the onion and fig mixture in the skillet. Season the salmon with salt and pepper.
  8. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  9. Let it rest for a few minutes before serving.

Notes

  • You can use fresh figs if they are in season. Adjust sweetness as needed.
  • For a richer flavor, you can deglaze the pan with a splash of red wine before adding the figs.
