  • 2 tablespoons unsalted butter, divided
  • 1 large yellow onion, thinly sliced
  • 1 pinch salt
  • 1 teaspoon granulated sugar (optional, for faster caramelization)
  • 4 slices good quality bread (sourdough or brioche work well)
  • 4 ounces sharp cheddar cheese, grated
  • 2 ounces Gruyère cheese, grated

Instructions

  1. Melt 1 tablespoon of butter in a large skillet over medium-low heat.
  2. Add the sliced onions and a pinch of salt to the skillet. Stir to coat.
  3. Cook the onions slowly, stirring every 5 to 10 minutes, for 30 to 40 minutes until they are deep brown and sweet. Add the sugar halfway through if you want to speed up the browning slightly. Remove the onions from the skillet and set aside.
  4. Wipe the skillet clean. Return it to medium heat.
  5. Butter one side of each bread slice with the remaining 1 tablespoon of butter.
  6. Place two slices of bread, butter-side down, in the skillet.
  7. Top each slice evenly with half of the grated cheddar and Gruyère cheese.
  8. Spoon half of the caramelized onions over the cheese on each sandwich.
  9. Top with the remaining slices of bread, butter-side up.
  10. Grill for 3 to 4 minutes per side, pressing down gently with a spatula, until the bread is golden brown and the cheese is completely melted and oozing.
  11. Slice in half and serve immediately.

Notes

  • Low heat is key for true caramelization; do not rush this step.
  • Use a mix of cheeses for the best flavor and melt factor.
  • If your cheese doesn’t melt fast enough, cover the pan briefly during cooking.
