1 package instant ramen noodles
2 large eggs
2 cloves garlic, minced
1/4 cup grated Parmesan cheese
2 tablespoons butter
2 slices bacon or pancetta, diced

Instructions
Cook ramen noodles according to package directions, but slightly undercook them. Drain most of the water, reserving about 1/4 cup of the starchy noodle water.
While the noodles cook, whisk together the eggs and Parmesan cheese in a small bowl.
In a large skillet or wok, melt the butter over medium heat. Add the diced bacon or pancetta and cook until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.
Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
Add the drained ramen noodles to the skillet with the garlic and bacon fat. Toss to coat.
Remove the skillet from the heat. This is important to prevent the eggs from scrambling.
Quickly pour the egg and cheese mixture over the hot noodles. Add a tablespoon or two of the reserved noodle water.
Toss everything vigorously and continuously until the sauce emulsifies and coats the noodles in a creamy, glossy sauce. The residual heat will cook the eggs.
Add the cooked bacon back into the skillet. Season with salt and pepper to taste.
Serve immediately, garnished with optional parsley or chives.
