2 servings ramen noodles
2 large eggs
1/2 cup grated Pecorino Romano cheese
1/4 cup grated Parmesan cheese
4 oz pancetta or bacon, diced
2 cloves garlic, minced
1/2 teaspoon black pepper
Salt to taste
1 tablespoon olive oil
Instructions
Cook pancetta or bacon in a skillet over medium heat until crispy. Remove pancetta and set aside, leaving the rendered fat in the skillet.
Add minced garlic to the skillet and cook for about 30 seconds until fragrant. Remove from heat.
In a bowl, whisk together eggs, Pecorino Romano, Parmesan, and black pepper.
Cook ramen noodles according to package directions. Drain, reserving about 1/2 cup of the noodle water.
Add the hot, drained noodles to the skillet with the garlic and pancetta fat. Toss to coat.
Quickly pour the egg and cheese mixture over the hot noodles. Toss vigorously to combine, using a little reserved noodle water if needed to create a creamy sauce.
Add the cooked pancetta back into the noodles and toss again.
Serve immediately, with extra black pepper and cheese if desired.
Notes
Ensure the skillet is off the heat when adding the egg mixture to prevent scrambling.
Adjust the amount of noodle water to achieve your desired sauce consistency.
