2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cardamom
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1 large egg
3/4 cup milk
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 large apple, peeled, cored, and diced
Vegetable oil for frying
Powdered sugar for dusting
Instructions
In a large bowl, whisk together the flour, baking powder, cardamom, salt, and cinnamon.
In a separate bowl, whisk the egg, milk, granulated sugar, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Gently fold in the diced apple.
Heat about 2-3 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat to 375°F (190°C).
Carefully drop rounded tablespoons of the batter into the hot oil, being careful not to overcrowd the pot. Fry in batches for 2-3 minutes per side, or until golden brown and cooked through.
Remove the fritters with a slotted spoon and place them on a wire rack set over paper towels to drain excess oil.
Dust generously with powdered sugar before serving.
Notes
Ensure the oil is at the correct temperature for even cooking. Too hot and they will burn on the outside before cooking through; too cool and they will absorb too much oil.
For best results, use a firm apple variety like Honeycrisp or Fuji.
