1 large head of cauliflower, cut into bite-sized florets
1 tablespoon olive oil
1/2 cup mayonnaise or Greek yogurt
1/4 cup sour cream or Mexican crema
1/2 cup crumbled Cotija cheese (or Parmesan for substitution)
1/4 cup fresh cilantro, chopped
2 tablespoons fresh lime juice
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional, for heat)
Salt and black pepper to taste
Extra lime wedges for serving
Instructions
Preheat your oven to 400°F (200°C).
Toss the cauliflower florets with olive oil, salt, and pepper on a baking sheet.
Roast the cauliflower for 20 to 25 minutes, flipping halfway, until tender and slightly browned.
While the cauliflower roasts, prepare the sauce. In a medium bowl, whisk together the mayonnaise (or yogurt), sour cream (or crema), lime juice, chili powder, smoked paprika, and cayenne pepper, if using.
In a separate small bowl, mix the crumbled Cotija cheese with half of the chopped cilantro.
Once the cauliflower is roasted, transfer it to a large bowl. Pour the creamy sauce over the hot cauliflower and toss gently until all pieces are coated.
Stir in most of the cheese and cilantro mixture, reserving some for garnish.
Serve immediately, topped with the remaining cheese mixture, cilantro, and extra lime wedges on the side.
Notes
For a grilled flavor, cook the cauliflower florets on a grill pan over medium-high heat until charred.
If you prefer a tangier flavor, increase the lime juice by one teaspoon.
To make this recipe vegan, substitute the mayonnaise with vegan mayonnaise and use a vegan feta or cashew-based cheese substitute for the Cotija.
