1 pound cauliflower florets
2 tablespoons olive oil
Salt and black pepper to taste
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups milk
2 cups shredded cheddar cheese
1/2 cup shredded Gruyere cheese
1/4 teaspoon nutmeg
Instructions
Preheat your oven to 400°F (200°C).
Toss cauliflower florets with olive oil, salt, and pepper on a baking sheet.
Roast cauliflower for 20-25 minutes, or until tender and slightly browned.
While cauliflower roasts, melt butter in a saucepan over medium heat.
Whisk in flour and cook for 1 minute, stirring constantly.
Gradually whisk in milk until smooth.
Bring to a simmer, stirring until the sauce thickens.
Remove from heat and stir in cheddar cheese, Gruyere cheese, nutmeg, salt, and pepper until cheese is melted and sauce is smooth.
Add the roasted cauliflower to the cheese sauce and stir to coat.
Serve immediately.
