Enjoy a creamy and cheesy cauliflower mac and cheese that offers the comfort of the classic dish without the carbs. This recipe uses tender cauliflower florets as a pasta substitute, coated in a rich cheese sauce, providing a satisfying and low-carb alternative.

Ingredients

Scale
  • 1 large head of cauliflower, cut into bite-sized florets
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded Gruyere cheese
  • 1/4 cup heavy cream
  • 1/4 cup milk (any kind)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Steam or boil the cauliflower florets until they are tender-crisp, about 5-7 minutes. Drain well and set aside.
  3. In a large oven-safe skillet or saucepan, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  4. Reduce the heat to low. Gradually whisk in the heavy cream and milk until combined.
  5. Slowly add the shredded cheddar and Gruyere cheeses, stirring constantly until the cheese is melted and the sauce is smooth.
  6. Stir in the salt, pepper, and nutmeg (if using).
  7. Add the cooked cauliflower florets to the cheese sauce and gently toss to coat.
  8. Transfer the mixture to a baking dish if your skillet is not oven-safe.
  9. Bake for 15-20 minutes, or until the cheese sauce is bubbly and lightly golden on top.
  10. Let it rest for a few minutes before serving.

Notes

  • For extra flavor, you can add a pinch of cayenne pepper to the cheese sauce.
  • Top with breadcrumbs or crushed pork rinds before baking for a crispy topping.
  • Adjust seasoning to your taste.
