Ingredients

  • 1 head cauliflower, cut into florets
  • 1 sweet potato, peeled and cubed
  • 1 red bell pepper, chopped
  • 1 cup broccoli florets
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • For the Tahini Dressing:
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon water
  • 1 clove garlic, minced
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pulse cauliflower florets in a food processor until they resemble rice.
  3. On a large baking sheet, toss sweet potato cubes, red bell pepper, broccoli florets, and chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper.
  4. Spread the vegetables and chickpeas in a single layer on the baking sheet.
  5. Roast for 20-25 minutes, or until vegetables are tender and slightly caramelized, flipping halfway through.
  6. While the vegetables are roasting, prepare the tahini dressing. In a small bowl, whisk together tahini, lemon juice, water, minced garlic, and salt until smooth and creamy. Add more water if needed to reach your desired consistency.
  7. To assemble the bowls, divide the cauliflower rice among serving bowls.
  8. Top the cauliflower rice with the roasted vegetables and chickpeas.
  9. Drizzle generously with the tahini dressing.

  • Feel free to customize with your favorite roasted vegetables like Brussels sprouts, zucchini, or carrots.
