1 (14.5 ounce) can diced tomatoes, undrained
4 cups beef broth
8 ounces elbow macaroni
1/2 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/4 cup pickle relish (optional)
Chopped fresh parsley, for garnish
Instructions
Brown the ground beef and onion in a large skillet over medium heat. Drain excess fat.
Stir in garlic, salt, pepper, and Worcestershire sauce. Cook for one minute until fragrant.
Add diced tomatoes (with juice) and beef broth to the skillet. Bring the mixture to a boil.
Add the elbow macaroni. Reduce heat to medium-low, cover, and simmer for 10 to 12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Remove the skillet from the heat. Stir in the heavy cream and both cheeses until the sauce is smooth and creamy.
If you like a tangy bite, stir in the pickle relish.
Serve immediately, garnished with fresh parsley.
