1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 cup marinara sauce
2 cups cooked pasta, such as penne or rotini
1 1/2 cups shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese, divided
1/4 cup Italian-seasoned breadcrumbs
2 tablespoons melted butter
Instructions
Preheat your oven to 375°F (190°C).
In a bowl, season the chicken pieces with salt and pepper.
Heat olive oil in an oven-safe skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes.
Stir in the marinara sauce and cooked pasta into the skillet with the chicken.
Sprinkle 1 cup of the mozzarella cheese and 1/4 cup of the Parmesan cheese over the mixture.
In a small bowl, combine the breadcrumbs and melted butter. Sprinkle this mixture evenly over the cheese.
Bake for 15-20 minutes, or until the casserole is bubbly and the breadcrumb topping is golden brown.
Remove from the oven and let it sit for a few minutes. Sprinkle with the remaining 1/2 cup mozzarella cheese and 1/4 cup Parmesan cheese before serving.
Notes
You can use any type of cooked pasta you prefer.
For extra flavor, add a pinch of red pepper flakes to the marinara sauce.
