  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken or vegetable broth
  • 1 cup broccoli florets, small
  • 1/2 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add onion and cook until soft, about 3 minutes.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Add the orzo and toast for 2 minutes, stirring constantly.
  5. Pour in the broth. Bring to a simmer, then reduce heat to low, cover, and cook for 10 minutes.
  6. Stir in the broccoli florets. Cover and cook for another 5-7 minutes, or until the orzo is tender and most liquid is absorbed.
  7. Remove the pan from the heat. Stir in the heavy cream, cheddar cheese, and Parmesan cheese until smooth and creamy.
  8. Season with salt and pepper. Serve immediately.

Notes

  • For extra flavor, use freshly grated cheese instead of pre-shredded.
  • If the mixture gets too thick while cooking, add a splash more broth or milk.
  • You can substitute Monterey Jack for some of the cheddar for a milder taste.
