These cheesy cauliflower tots are a fantastic low-carb alternative to traditional tater tots. They’re a sneaky way to get your kids to eat their vegetables, and they make a delicious snack for the whole family.

Ingredients

  • 1 medium head cauliflower, about 4 cups florets
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 1/4 cup almond flour
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional: cooking spray or olive oil for baking

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Wash and chop the cauliflower into florets. Steam or boil the cauliflower until very tender, about 10-15 minutes. Drain thoroughly.
  3. Transfer the cooked cauliflower to a food processor or a large bowl. Mash or pulse until it forms a fine crumb-like texture. You want to remove as much moisture as possible. Let it cool slightly.
  4. In a bowl, combine the mashed cauliflower, shredded cheddar cheese, grated Parmesan cheese, beaten egg, almond flour, garlic powder, salt, and pepper. Mix well until everything is thoroughly combined.
  5. Shape the mixture into tot-like shapes. You can use your hands or a small cookie scoop.
  6. Place the tots on the prepared baking sheet.
  7. For crispier tots, lightly spray them with cooking spray or brush with olive oil.
  8. Bake for 20-25 minutes, flipping halfway through, until the tots are golden brown and heated through.
  9. Serve warm with your favorite dipping sauce.

Notes

  • Ensure the cauliflower is very well drained to avoid soggy tots.
  • You can add other seasonings like onion powder or paprika to the mix.
  • These can be made ahead and reheated in the oven or an air fryer.
