Ingredients

Scale
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup milk
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup frozen broccoli florets, thawed
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Cook the rice according to package directions using the chicken broth instead of water. Set aside.
  3. In a large bowl, combine the cooked rice, shredded chicken, cream of chicken soup, milk, onion powder, garlic powder, pepper, and salt. Mix well.
  4. Stir in the thawed broccoli florets and 1 1/2 cups of the shredded cheddar cheese. Mix just until combined.
  5. Spread the mixture evenly into the prepared baking dish.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  7. Bake for 25 to 30 minutes, or until the casserole is bubbly and the cheese on top is melted and lightly golden.
  8. Let the bake rest for 5 minutes before serving.

Notes

  • You can use leftover rotisserie chicken for faster prep time.
  • Ensure the broccoli is fully thawed to prevent excess water in the casserole.
  • For a richer flavor, substitute cream of chicken soup with homemade cream sauce.
