2 pounds yellow squash, thinly sliced
1 tablespoon olive oil
1 cup chopped onion
2 cloves garlic, minced
1 (10.5 ounce) can condensed cream of mushroom soup
1/2 cup sour cream
1/2 cup shredded cheddar cheese, plus more for topping
1/4 cup shredded Monterey Jack cheese
Salt and black pepper to taste
1/2 cup crushed buttery crackers or breadcrumbs (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for 1 minute more until fragrant.
In a large bowl, combine the sliced squash, cooked onion and garlic mixture, condensed cream of mushroom soup, sour cream, cheddar cheese, and Monterey Jack cheese.
Season with salt and black pepper to your liking. Mix everything together until well combined.
Pour the squash mixture into a greased 9×13 inch baking dish.
Top with additional shredded cheddar cheese and the crushed buttery crackers or breadcrumbs, if using.
Bake for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and golden brown.
