  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • Salt to taste
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1/4 cup grated Monterey Jack cheese, plus more for topping
  • 2 ounces queso fresco, crumbled
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the corn with olive oil and season with chili powder, smoked paprika, and salt.
  3. Grill the corn, turning occasionally, until tender and lightly charred, about 8-10 minutes.
  4. While the corn is grilling, mix together the mayonnaise, sour cream, grated Monterey Jack cheese, crumbled queso fresco, cilantro, and lime juice in a bowl.
  5. Once the corn is grilled, let it cool slightly.
  6. Spread the cheesy mixture evenly over each ear of corn.
  7. Top with additional grated Monterey Jack cheese and queso fresco.
