This Cheesy Taco Casserole is an easy and delicious weeknight meal. It features seasoned ground beef, layers of melty cheese, and tender tortillas, all baked together for a comforting and flavorful dish perfect for any family gathering or casual dinner.

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (15 ounce) can refried beans
  • 8 (8 inch) flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Optional toppings: sour cream, salsa, chopped cilantro, sliced jalapeƱos

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
  3. Stir in the taco seasoning and water. Bring to a simmer and cook for 3-5 minutes, or until the sauce has thickened.
  4. Add the diced tomatoes and green chilies (undrained) and the refried beans to the skillet. Stir to combine and heat through.
  5. Spread a thin layer of the meat and bean mixture on the bottom of a 9×13 inch baking dish.
  6. Layer 4 tortillas over the meat mixture, tearing them to fit the dish if necessary.
  7. Spread half of the remaining meat and bean mixture over the tortillas.
  8. Sprinkle 1 cup of cheddar cheese and 1/2 cup of Monterey Jack cheese over the meat layer.
  9. Repeat the layering process with the remaining 4 tortillas, the rest of the meat and bean mixture, and the remaining cheeses.
  10. Cover the baking dish with foil.
  11. Bake for 20 minutes.
  12. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  13. Let stand for a few minutes before serving.
  14. Serve with your favorite toppings.

Notes

  • For a spicier casserole, use a spicier taco seasoning or add a pinch of cayenne pepper to the meat mixture.
  • If you prefer a crispier layer, you can lightly toast the tortillas before assembling the casserole.
  • This casserole can be assembled ahead of time and refrigerated. Add a few extra minutes to the baking time if baking from cold.
