This Cheesy Taco Pasta is the kid-friendly fusion dinner you need. We take the best parts of tacos and combine them with a creamy pasta base for a fast, family-pleasing meal that actually works.

  • 1 pound ground beef or turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning mix
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 4 cups water or beef broth
  • 8 ounces elbow macaroni or small pasta shape
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Salt and pepper to taste

Instructions

  1. Brown the ground meat in olive oil in a large pot or Dutch oven over medium heat. Drain any excess fat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and taco seasoning. Cook for 1 minute until fragrant.
  4. Pour in the diced tomatoes and green chilies, and the water or broth. Bring the mixture to a boil.
  5. Add the pasta to the boiling liquid. Cook according to package directions, stirring occasionally, until the pasta is tender. This usually takes 8 to 10 minutes.
  6. Reduce the heat to low. Stir in the milk.
  7. Remove the pot from the heat. Stir in the cheddar cheese and Monterey Jack cheese until completely melted and creamy.
  8. Taste and add salt and pepper if needed. Serve immediately.

Notes

  • For extra flavor, use homemade taco seasoning instead of the packet.
  • If the sauce seems too thick, add an extra splash of milk or broth until you reach your desired consistency.
  • Toppings like sour cream, chopped cilantro, or crushed tortilla chips make great additions.
