Prepare this simple, baked casserole that combines shredded zucchini with pizza sauce, cheese, and your favorite toppings for a satisfying weeknight meal.

  • 3 medium zucchini, shredded and squeezed dry
  • 1 large egg, lightly beaten
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup pizza sauce
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup mini pepperoni or sliced mushrooms (optional toppings)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, combine the squeezed, dry zucchini, egg, Parmesan cheese, oregano, garlic powder, salt, and pepper. Mix until everything is well combined.
  3. Press the zucchini mixture evenly into the bottom of the prepared baking dish to form the crust layer.
  4. Spread the pizza sauce evenly over the zucchini base.
  5. Sprinkle half (3/4 cup) of the mozzarella cheese over the sauce.
  6. Distribute your chosen toppings, like pepperoni or mushrooms, over the cheese layer.
  7. Top with the remaining 3/4 cup of mozzarella cheese.
  8. Bake for 25 to 30 minutes, or until the cheese is melted, bubbly, and lightly browned.
  9. Let the casserole rest for 5 minutes before slicing and serving.

Notes

  • Squeeze as much liquid out of the shredded zucchini as possible using paper towels or a clean kitchen towel. This prevents a watery casserole.
  • You can substitute Italian sausage or cooked ground beef for pepperoni if desired.
  • For a crispier edge, bake for 5 minutes longer.
