Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, cut into pieces
  • 4 ounces unsweetened chocolate, chopped
  • 4 ounces bittersweet chocolate, chopped
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup vodka
  • 1 cup maraschino cherries, drained and halved

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a heatproof bowl set over a saucepan of simmering water, melt together the butter and both types of chocolate. Stir until smooth. Remove from heat and let cool slightly.
  3. In a large bowl, whisk together the granulated sugar and eggs until well combined. Whisk in the vanilla extract.
  4. Gradually whisk the melted chocolate mixture into the egg mixture until fully incorporated.
  5. In a separate small bowl, whisk together the flour and salt.
  6. Add the flour mixture to the chocolate mixture and stir until just combined. Do not overmix.
  7. Gently fold in the vodka and halved maraschino cherries.
  8. Pour the batter into the prepared baking pan, spreading it evenly.
  9. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out with moist crumbs attached.
  10. Let the brownies cool completely in the pan before cutting into squares.

Notes

  • For an extra boozy kick, you can soak the maraschino cherries in vodka for at least 30 minutes before draining and adding them to the batter.
  • Ensure your vodka is well-drained to avoid excess liquid in the brownies.
  • These brownies are best enjoyed at room temperature.
