1/4 cup chia seeds
1 cup unsweetened almond milk (or milk of choice)
1 tablespoon maple syrup (adjust to taste)
1/2 teaspoon vanilla extract

Instructions
Combine the chia seeds, almond milk, maple syrup, vanilla extract, and salt in a jar or container with a tight-fitting lid.
Stir the mixture well for about one minute to prevent the seeds from clumping at the bottom.
Place the lid on the container and refrigerate for at least 4 hours, or preferably overnight.
Before serving, stir the pudding again. If the consistency is too thick, add a splash more milk until you reach your desired creaminess.
Top with your favorite additions and serve cold.
Notes
For a chocolate version, add 1 tablespoon of unsweetened cocoa powder with the dry ingredients.
To increase protein, substitute half the almond milk with Greek yogurt or protein powder mixed with water.
If you prefer a smoother texture, blend the mixture briefly in a blender before refrigerating.
