You are making a cozy Chicken Alfredo Gnocchi Bake. This dish swaps traditional pasta for soft, pillowy gnocchi, coating everything in a rich, cheesy Alfredo sauce before baking it to golden perfection. It is comfort food reinvented.

Ingredients

Scale
  • 1 pound potato gnocchi
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried Italian herbs
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Cook the gnocchi according to package directions until they float. Drain well and set aside.
  3. In a large skillet over medium-high heat, warm the olive oil. Season the chicken pieces with salt, pepper, garlic powder, and Italian herbs.
  4. Add the seasoned chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
  5. Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic burn.
  6. Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer, stirring frequently. Let it cook for about 5 minutes until the sauce thickens slightly.
  7. Remove the skillet from the heat. Stir in the 1/2 cup of Parmesan cheese and the mozzarella cheese until the sauce is smooth and creamy. Taste and adjust seasoning if needed.
  8. Gently fold the cooked gnocchi and the cooked chicken into the Alfredo sauce until everything is evenly coated.
  9. Transfer the mixture to your prepared baking dish. Sprinkle a little extra Parmesan cheese over the top.
  10. Bake for 15-20 minutes, or until the top is bubbly and lightly golden brown.
  11. Let the bake rest for 5 minutes before serving. Garnish with fresh parsley, if using.

Notes

  • For an extra deep flavor, you can lightly sear the gnocchi in a separate pan after boiling until they have a slight crust before adding them to the sauce.
  • If the sauce seems too thick after adding the gnocchi, add a splash more chicken broth or cream to reach your desired consistency.
  • Use good quality Parmesan cheese for the best flavor in your sauce.
