  • 12 Lasagna noodles
  • 1 tablespoon Olive oil
  • 1 pound Boneless, skinless chicken breasts, cooked and shredded
  • 1 cup Heavy cream
  • 1 cup Milk
  • 4 tablespoons Unsalted butter
  • 4 cloves Garlic, minced
  • 1/2 cup All-purpose flour
  • 1 1/2 cups Grated Parmesan cheese, divided
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Nutmeg
  • 15 ounces Ricotta cheese
  • 1 large Egg
  • 1 cup Shredded mozzarella cheese, divided
  • 2 cups Marinara sauce

Instructions

  1. Cook lasagna noodles according to package directions until al dente. Drain and lay them flat on wax paper.
  2. Prepare the alfredo sauce: Melt butter in a saucepan over medium heat. Add minced garlic and cook for one minute until fragrant.
  3. Whisk in the flour and cook for one minute, stirring constantly. Slowly whisk in the heavy cream and milk until the mixture thickens, about 5-7 minutes.
  4. Remove the sauce from the heat. Stir in 1 cup of Parmesan cheese, salt, pepper, and nutmeg until smooth.
  5. In a separate bowl, combine the ricotta cheese, egg, shredded cooked chicken, and 1/2 cup of the mozzarella cheese. Mix well.
  6. Spread about 1/4 cup of the alfredo sauce over the bottom of a 9×13 inch baking dish. Pour the marinara sauce over the alfredo layer.
  7. Spread an even layer of the chicken-ricotta mixture over each cooked lasagna noodle.
  8. Roll each noodle tightly and place it seam-side down in the prepared baking dish on top of the sauces.
  9. Pour the remaining alfredo sauce evenly over the roll-ups.
  10. Sprinkle the remaining 1/2 cup mozzarella cheese and the remaining 1/2 cup Parmesan cheese on top.
  11. Bake at 375 degrees F for 25-30 minutes, or until bubbly and the cheese is golden brown.
  12. Let the roll-ups rest for 10 minutes before serving.

Notes

  • Cook the chicken breast ahead of time to save prep time. Poaching or baking works well.
  • If your sauce seems too thick after removing it from the heat, add a splash of milk to thin it slightly.
  • Use fresh garlic for the best flavor in your alfredo sauce.
