Create a fun, comforting meal by stuffing tender bell peppers with a creamy, cheesy Chicken Alfredo filling. This recipe fixes common stuffed pepper issues to give you a dish that truly delivers on flavor.

  • 4 Large Bell Peppers (any color)
  • 1 tbsp Olive Oil
  • 1 lb Boneless, Skinless Chicken Breast, cooked and shredded
  • 8 oz Cream Cheese, softened
  • 1/2 cup Heavy Cream
  • 1 cup Shredded Parmesan Cheese, plus more for topping
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Black Pepper
  • Pinch of Salt

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Cut the tops off the bell peppers. Remove seeds and membranes. Place peppers cut-side up in the baking dish.
  3. In a large bowl, combine the softened cream cheese, heavy cream, 1 cup Parmesan cheese, garlic powder, pepper, and salt. Mix until smooth.
  4. Fold in the cooked, shredded chicken until evenly coated with the Alfredo mixture.
  5. Spoon the chicken Alfredo filling evenly into the hollowed-out bell peppers. Mound the filling slightly.
  6. Sprinkle extra Parmesan cheese over the top of each stuffed pepper.
  7. Pour about 1/4 inch of water into the bottom of the baking dish to help steam the peppers while baking.
  8. Bake for 30 to 35 minutes, or until the peppers are tender and the filling is hot and bubbly.
  9. Let cool slightly before serving.

  • Ensure your cream cheese is fully softened to avoid lumps in the sauce.
  • Cook the chicken ahead of time for faster assembly. Rotisserie chicken works great.
  • If you prefer softer peppers, you can blanch or microwave them for 5 minutes before stuffing.
