  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup unsalted butter
  • 2 cloves garlic, minced
  • 1 1/2 cups grated Parmesan cheese, plus more for topping
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (15 oz) container ricotta cheese
  • 1 large egg
  • 1/4 cup chopped fresh parsley
  • 2 cups shredded mozzarella cheese
  • 1 cup Alfredo sauce (store-bought or homemade)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Cook the jumbo shells according to package directions until al dente. Drain them well and set them aside to cool slightly.
  3. Prepare the Alfredo sauce base: In a medium saucepan over medium heat, melt the butter. Add the minced garlic and cook for one minute until fragrant.
  4. Whisk in the heavy cream and chicken broth. Bring the mixture to a simmer, then reduce the heat to low. Stir in the 1 1/2 cups of Parmesan cheese, salt, and pepper until the sauce is smooth. Remove from heat.
  5. In a large bowl, combine the shredded cooked chicken, ricotta cheese, and egg. Mix well.
  6. Pour about half of the prepared Alfredo sauce into the chicken mixture. Stir in the fresh parsley. This is your creamy filling.
  7. Carefully stuff each cooked shell with the chicken and ricotta filling. Arrange the stuffed shells in a single layer in the prepared baking dish.
  8. Pour the remaining half of the Alfredo sauce evenly over the stuffed shells.
  9. Top generously with the shredded mozzarella cheese. Sprinkle a little extra Parmesan cheese over the top.
  10. Bake for 20 to 25 minutes, or until the cheese is melted, bubbly, and lightly golden brown. Let stand for 5 minutes before serving.
