  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1 cup cooked, shredded chicken
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds, creating a boat shape.
  3. Brush the inside of the zucchini boats with olive oil.
  4. In a bowl, combine the shredded chicken, heavy cream, Parmesan cheese, minced garlic, salt, and pepper. Mix well.
  5. Spoon the chicken Alfredo mixture evenly into the zucchini boats.
  6. Place the stuffed zucchini boats on a baking sheet.
  7. Bake for 20-25 minutes, or until the zucchini is tender and the filling is bubbly and lightly browned.
