1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
1 lb fresh green beans, trimmed
2 tablespoons olive oil
4 cloves garlic, minced
1/4 cup honey
1/4 cup soy sauce (or tamari for gluten-free)
2 tablespoons apple cider vinegar
1 teaspoon ground ginger
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
Instructions
Season the chicken pieces lightly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Add the trimmed green beans to the same skillet. Cook, stirring occasionally, for 4-5 minutes until they start to become tender-crisp.
Reduce the heat to medium. Add the minced garlic and ginger to the green beans and cook for 1 minute until fragrant.
In a small bowl, whisk together the honey, soy sauce, apple cider vinegar, and red pepper flakes (if using).
Pour the sauce mixture into the skillet with the green beans. Bring to a simmer.
Return the cooked chicken to the skillet. Toss everything gently to coat the chicken and beans evenly with the sauce.
Continue to cook for 2-3 minutes, or until the sauce has thickened slightly and the chicken is cooked through (internal temperature reaches 165°F or 74°C).
Serve immediately.
Notes
For extra flavor, use chicken thighs instead of breasts. Adjust cooking time as needed.
If you prefer crispier green beans, blanch them in boiling water for 2 minutes before adding them to the skillet.
You can garnish with sesame seeds or chopped green onions before serving.
