  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • 4 large flour tortillas
  • 2 tablespoons butter or oil for cooking

Instructions

  1. In a bowl, combine the shredded chicken, crumbled bacon, Monterey Jack cheese, cheddar cheese, and ranch dressing. Mix well until everything is evenly coated.
  2. Heat a large skillet or griddle over medium heat. Add half of the butter or oil.
  3. Place one tortilla in the hot skillet. Spread half of the chicken mixture evenly over one half of the tortilla.
  4. Fold the empty half of the tortilla over the filling to create a half-moon shape.
  5. Cook for 3 to 4 minutes per side, pressing down gently with a spatula, until the tortilla is golden brown and the cheese is completely melted.
  6. Remove the first quesadilla and place it on a cutting board. Repeat the process with the remaining filling, tortillas, and butter/oil.
  7. Slice each quesadilla into wedges and serve immediately.
