Fix that broken promise of a bland casserole! This recipe delivers the ultimate comfort food: a creamy, cheesy Chicken Broccoli Rice Casserole that is easy to make for a satisfying weeknight dinner with minimal cleanup.

Ingredients

Scale
  • 2 cups cooked white rice (about 1 cup uncooked)
  • 2 cups cooked, shredded chicken breast
  • 2 cups fresh broccoli florets, lightly steamed
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cream of chicken soup, cream of mushroom soup, mayonnaise, sour cream, onion powder, garlic powder, pepper, and salt. Mix until the sauce is smooth.
  3. Stir in the milk until the sauce is creamy.
  4. Gently fold in the cooked rice, cooked chicken, lightly steamed broccoli florets, and 1 1/2 cups of the shredded cheddar cheese. Mix everything until it is evenly coated in the sauce.
  5. Transfer the mixture to your prepared baking dish and spread it into an even layer.
  6. Top the casserole evenly with the remaining 1/2 cup of shredded cheddar cheese.
  7. Bake for 25 to 30 minutes, or until the casserole is hot throughout and the cheese on top is melted and bubbly.
  8. Let the casserole rest for 5 minutes before serving. This is the best chicken casserole recipe for a quick family dinner.

Notes

  • For a make ahead casserole option, assemble the entire dish, cover tightly with foil, and refrigerate for up to 24 hours. Add 10-15 minutes to the baking time if baking directly from the refrigerator.
  • If you want a healthier chicken broccoli casserole variation, substitute Greek yogurt for the mayonnaise and sour cream.
  • Use leftover rotisserie chicken to make this an even faster one pot chicken rice dinner.
