Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup milk
  • 1/4 cup chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package (10 oz) refrigerated biscuit dough, cut into quarters

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the chicken pieces, frozen mixed vegetables, condensed cream of chicken soup, milk, chopped onion, salt, and pepper. Stir until everything is well combined.
  3. Pour the chicken mixture into a 9×13 inch baking dish.
  4. Arrange the biscuit quarters evenly over the top of the chicken mixture.
  5. Bake for 30-35 minutes, or until the biscuits are golden brown and the chicken mixture is bubbly.
  6. Let it cool slightly before serving.

Notes

  • You can use leftover cooked chicken instead of raw chicken. If using cooked chicken, reduce the baking time by about 10-15 minutes.
  • Feel free to add other vegetables you enjoy, such as chopped celery or potatoes.
  • For an extra rich flavor, you can sprinkle shredded cheddar cheese over the biscuits before baking.
